...but not the little travel ones where the cable is wound in the middle.
I'm trying to find something where one side is fixed and the cable extends in one direction only, so it can be mounted in a conference table or on a wall. I know that Krone made something like this a long time ago, but now I can't find anything like it.

I think I could make something out of outdoor clothesline retractors and install them in the drop ceiling.
But are clothesline retractors CAT5 rated? :)

You mean with slip rings to get the signal from the fixed cable to the moving cable? I don't know if you can do cat5 with slip rings.
