Can you use 2 different (but compatible) keypad models on the same bus on a Gemini P816 panel?

Yes. You can use anby of the RP series keypads or any of the new K series keypads. The only thing you can't do is mix RP and K series keypads on the same system. The P816 supports up to 7 keypads.
Say the K3DGTL, K2AS, and the K1CA keypads on the same P816 Panel...... YES, shouldn't be a problem
