Is there a MIB/OID for the PIX that will allow me to monitor the number of VPN tunnels in use via MRTG?
In other words, is there an SNMP value that indicates the number of active VPN tunnels?

So you could try browsing 1.3.6.1.4.1.9.9.147.1.1
I no longer recall with certainty whether the total active tunnel count is there or not; I do recall for sure that you cannot get any details about any tunnel.
