Can anyone offer any pointers on how to get the Nortel 1120E IP Phone to interoperate in other environments such as Cisco or Siemens controllers?

I would think the only way you can do this would be to get SIP loaded onto it. Stock 1120's unless specified will be proprietary (UNISTIM) firmware. I assume your Cisco/Siemens environment supports SIP.
You are correct the 1120 would need to have the sip firmware loaded in order to function on a native sip enviroment.
