I'm hand wiring a cat5e connector (for a wall socket), but I'm not too knowledgeable on the subject, do I use t568a or the t568b configuration?

As long as you use the same at both ends it doesn't matter.

You can use either, but you need to wire it up the same as what the other end is wired, so look physically at the other end and see what it has. Either are valid and both are used all over the place. It doesn't matter anything else is plugged into it, just matched for this cable run.
