I'm trying to configure a PIX 501 which has the web interface turned off - how do I turn it back on so that I can start setting up NAT?

Add the following lines.....
http server enable http xxx.xxx.xxx.xxx 255.xxx.xxx.xxx [outside|inside] pdm location xxx.xxx.xxx.xxx 255.255.255.255 [outside | inside]
