My logging configuration is below. This configuration doesn't seem to capture all traffic. How do I specify a) all traffic logging b) filtering criteria based on source ip, destination ip, protocol, etc...?
logging on logging timestamp logging buffered informational logging trap informational logging history notifications logging host inside 192.168.3.76

a) conf t log trap debug or log trap 7
b) have a syslog server do that
To do that you pretty much need to do netflow accounting. There are third party netflow collectors available. Cisco do not publish such software.
