I would appreciate advice on Management Centre for CSA, specifically how deployed (server) licences are recorded, and how to recover a license.

If you meant that you install the CSA agent on a machine, which puts the license count down by one, if you find you uninstall the client from that machine or the server gets replaced etc, you can delete the server from the registration by going into the registered hosts portion of the CSA management centre. You can tick the relevant box and the delete button is at the bottom of the screen. This will allow another host to register.
