Flagging packets as low priority

I have a cisco 2610 running 12.2 enterprise. I am no cisco expert so I am posing the question here. I run backups at night accross the WAN and would like some way to flag the packets destined for the backup server as low priority. In other words, I want every other device on the WAN/LAN to have there packets go through before the backup packets do. I don't want to use traffic shaping because I want the backups to utilize the full bandwidth when nothing else is in use. I also have some policies already in place to give our VoIP packets priority so I don't want to mess with those.

Is there a way to do this?
