I upgraded my Pix 515 to PixOS 7 a while ago because Cisco has a bunch of marketing on their site saying that it can block instant messaging clients.
Unfortunately, the only docs I can find that talk about this are marketing, with nothing useful technically. Does anyone have experience with this?

I don't have time to research an exact answer for you but I'd check out the ports and protocols that IMs you want to block are running and then create an extended access list to block them. Not an answer but a map and compass to get you started on your journey....
