Can I use somehow use CAT5 instead of COAX for SPDIF?

I need to get SPDIF audio into my bedroom from my living room. I was planning to run RG6, but thought that if I could run CAT5 instead, I would have a more future usable piece of cable. Besides, its much easier to handle CAT5 instead of stiff RG6.

Can anybody provide any tips?

You can do that, but you need a pair of baluns to convert between the media. Grab a pair from here (or other online sources to that matter):

and you'll be fine up to 600 ft (183 m).

I had JUST found that exact site and thought I would post here about what I found. Hmm, $25 x 2 to not have to use RG6, yep!

As an experiment, you might want to try to connect them directly to a piece of UTP. This may work for some limited distances. I don't have digital audio equipment to try it on, but we do it to analog audio/video all the time (up to 100 ft imperfections, if any, cannot be picked up by a human).
