Is there a way of getting the ASA to send a trap when a user logs onto the vpn which includes the Username of the user who's just logged on (and maybe even the information thats in the users table..such as client version)

Step 5 To enable the security appliance to send traps to the NMS, enter the following command:
hostname(config)# snmp-server enable traps [all | syslog | snmp [trap] [...] | entity [trap] [...] | ipsec [trap] [...] | remote-access [trap]]
so try something like "snmp-server enable traps remote-access"
