I have a wireless product connection to a WAP to the internet, Would the host server/computer know that my product exist and if it dose what can they see? Mac address, items downloaded, site been to?

What host computer? Any webserver that you go to? No, then can not tell that you are connected via a wireless connection, and they cannot get your MAC address, as the MAC address are changed by each router the packet passes through.

Assuming this "host/server" is not on the AP's LAN, the answer will depend on what cookies you browsers accept and what spyware has been installed.
