Catalyst 3500 switching method

I'm new to the world of Cisco networking...

I have reached a section in the CCNA study guide explaining the three switching types:

- Store and forward

- Cut-through

- FragmentFree

We use the Catalyst 3500 and the odd 3750. All three switching methods seem to have their own benefits. What is the default method used on new Cisco switches? Is this something than can be configured from within IOS?
