What's the main differences between a dedicated rackmount server and a
hi-spec desktop pc? RAM capacity is obvious but are there others?

The true rackmount server has redundant power supply units, hot-swappable
harddrives, etc.

most servers have larger hubs, and several HDD's running in high RAID levels
