Newbie: basic "economy" network configuration question; internal email servers

I am trying to understand basic "limited budget" networking concepts. Any help is appreciated.

Assume you have a small office network with an inexpensive VPN capable router such as the NETGEAR FVS318.

This router connects to the cable from your ISP and will look after the internal network of the small office of only a few computers. Assume that you have not paid the money for a domain controller and a wins server.

Now what about adding an email server to the network?

This server needs to be set up to handle both external and internal email.

What would be the minimum configuration needed to get the email server look after external email yet keep internal email protected?
