I think I see what you want, but activating it with head movement on a
motorcycle would be unreliable.
If you ride you know that motorcyclist get bounced around a lot. I'll think
about it some more.

why don't you just mount a button above or below the horn and wire it? It
would be a LOT simpler to implement. Actually you could make it activate
all the lights on the bike PLUS your helmet in a freaky light show. Maybe
the horn too.
