I need to setup a syslog server for a PIX.
Is it as easy as setting up a Linux box with syslog and adding it's IP address to the PIX config?
Or do I need a specific flavor of Linux and/or specific version of Syslog?

I believe that any syslog server will be fine.

This is more or less a security feature, to prevent people from sending you bogus syslog packets (which, after all, have no authentication information.)
