Is it possible to define what subnet each of the four lan ports/interface
has? If yes, how?

Is it possible to do it for vpn client subnet? For instance, if vpn ip pool
subnet is 192.168.4.0, I want to make physical connection to machine whose
ip address is on 192.168.4.0.

I'm pretty sure you cannot.

How about creating VPN groups with access to desired hosts only?

That is, each VPN group would restrict hosts by having it's own pool and
ACL's for that pool

Not possible on the PIX 501.
